Vegan Peanut Butter Energy Balls Recipe
Ingredients:
- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/4 cup maple syrup
- 1/4 cup chia seeds
- 1/4 cup ground flaxseed
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup vegan chocolate chips (optional)
Instructions:
1. Begin by blending the rolled oats in a food processor for 30-60 seconds until they reach a flour-like consistency.
2. Transfer the oat flour to a mixing bowl and add the peanut butter, maple syrup, chia seeds, ground flaxseed, vanilla extract, and salt. Use a wooden spoon or spatula to mix everything together until well-combined.
3. If desired, mix in vegan chocolate chips to the mixture.
4. Using your hands, form the mixture into 1-inch balls, rolling them between your palms. Repeat until all the mixture is used.
5. Place the energy balls onto a lined baking sheet and refrigerate for 30 minutes to firm up.
6. Once they are firm, the energy balls can be transferred to an airtight container and stored in the refrigerator for 1-2 weeks.
